I have spent a good chunk of my time the past two weeks freezing produce and a few other goodies. I wish I had an extra freezer now, never thought I'd ever say that! The trick to freezing liquids like soups and pesto?
-Spray your ice cube trays down with pam/cooking spray
-Don't fill to the very top like you would water for ice
-Allow to freeze and then carefully pop out onto a dish cloth or cutting board
-Carefully place cubes into a gallon sized plastic bag
-Lie bag flat onto cookie sheet and freeze flat (makes it easier for stacking, more on that later!)
